OHOW’s Favorite Seafood Ceviche Recipe

Lighten up your entertaining with a summery Seafood Ceviche. This recipe takes fresh, raw seafood, ripe tomatoes, scallions, jalapenos, and various seasonings to create a mouthwatering dish. It’s a fresh, healthy appetizer that everyone loves!

Chef Mike says, “Just imagine a warm, summer night with a few friends in the backyard sipping on a margarita and snacking on a cool tortilla chip topped with lime-infused, fresh seafood and avocado. Oooh, that sounds nice!”

This ceviche recipe includes raw fish marinated in lemon and lime juice, ultimately cooking the seafood in citric acid for a refreshing flavor. It is served cold with tortilla chips as an appetizer or can be added to a bed of rice for a light meal. Follow the directions below to create a surprisingly easy, fun new summer recipe that is always a hit!

OHOW’s Favorite Seafood Ceviche Recipe

Serve this refreshing, flavorful seafood ceviche with tortilla chips or over a bed of crisp lettuce or fluffy rice. This dish is perfect as an appetizer or light meal.

Ingredients
  

  • 4 limes for garnish
  • 4 large ripe avocados for garnish
  • 1 tbsp fresh lemon juice
  • ¼ cup fresh lime juice
  • 3 diced fresh tomatoes
  • ¼ teaspoon ground cumin
  • 1 bunch scallions, trimmed and chopped about 6 each
  • 1 lb  raw bay shrimp
  • 1 lb raw bay scallops
  • 2 diced fresh jalapeno peppers
  • 1 diced fresh serrano chilli pepper
  • 1 tsp dried oregano
  • ¼ cup diced fresh cilantro
  • 2 tsp Kosher salt
  • = = Tortilla chips for serving

Instructions
 

  • In a large mixing bowl, mix lemon and lime juice, tomato, cumin, scallions, jalapeno, serrano chili pepper, oregano, cilantro, salt, and shrimp and raw bay scallions. Toss all ingredients together, cover with plastic, and let marinate overnight or about 12 hours.
  • When ready to serve, toss seafood one more time and adjust seasonings as needed.
  • Ceviche can be served in a glass bowl and garnished with sliced fresh avocado, lime wedges, and crispy tortilla chips or as a salad served over strips of iceberg lettuce

Notes

If marinated seafood isn’t your cup of tea, one can par-cook and chill the seafood and then add the rest of the ingredients.
