OHOW’s Favorite Seafood Ceviche Recipe

This ceviche recipe includes raw fish marinated in lemon and lime juice, ultimately cooking the seafood in citric acid for a refreshing flavor. It is served cold with tortilla chips as an appetizer or can be added to a bed of rice for a light meal. OHOW’s Favorite Seafood Ceviche Recipe
Ingredients
- 4 limes for garnish
- 4 large ripe avocados for garnish
- 1 tbsp fresh lemon juice
- ¼ cup fresh lime juice
- 3 diced fresh tomatoes
- ¼ teaspoon ground cumin
- 1 bunch scallions, trimmed and chopped about 6 each
- 1 lb raw bay shrimp
- 1 lb raw bay scallops
- 2 diced fresh jalapeno peppers
- 1 diced fresh serrano chilli pepper
- 1 tsp dried oregano
- ¼ cup diced fresh cilantro
- 2 tsp Kosher salt
- = = Tortilla chips for serving
Instructions
- In a large mixing bowl, mix lemon and lime juice, tomato, cumin, scallions, jalapeno, serrano chili pepper, oregano, cilantro, salt, and shrimp and raw bay scallions. Toss all ingredients together, cover with plastic, and let marinate overnight or about 12 hours.
- When ready to serve, toss seafood one more time and adjust seasonings as needed.
- Ceviche can be served in a glass bowl and garnished with sliced fresh avocado, lime wedges, and crispy tortilla chips or as a salad served over strips of iceberg lettuce
